How do I use these ferments?
To prepare fruit kefir for the first time
Place 1 liter of mineral water and 40 grams of sugar (i.e. 8 sugar cubes) in the container. This quantity of sugar is necessary to help the ferment multiply, as the sugar serves as a substrate for fermentation. This sugar will be almost totally consumed by the ferment at the end of fermentation.
In a cup, dilute the amount of powder contained in the bottle and the contents of the capsule with a little mineral water to obtain a homogeneous, lump-free mixture.
Add the prepared ferment to the sugar water and the juice of one lemon.
Allow fermentation to develop at room temperature (18 to 25°C) for at least 48 hours for the first preparation, with the lid of the container simply placed on top.
For subsequent Yalacta fruit kefir preparations
Take the container used for the initial preparation, in which you have kept the whitish deposit with a little liquid,
Add 1 to 3 liters of mineral water containing 40 grams of sugar and one lemon juice per liter,
Mix well and proceed as above. However, the following preparations are quicker:
- 24 hours at room temperature, bottle covered,
- 12 hours in a sealed container.
After 20 to 30 transplants (over a maximum of 4 to 6 weeks), ageing being a law of nature, it is advisable to renew your ferment to be sure of always preparing a balanced kefir of good quality.
