Coconut oil contains almost exclusively saturated fatty acids, with a little vitamin E. But unlike animal fats, which are also very rich in saturated fatty acids, it is made up of an unusual quantity of medium-chain fatty acids, or medium-chain triglycerides (MCTs). Simply put, MCTs go straight to your liver and are metabolized to produce energy, or are transformed into ketones which can have a therapeutic effect on the brain.

Like all oils, coconut oil is made up of 100% fatty acids. But unlike other vegetable oils, 85% of these fatty acids are saturated.
